1 medium zucchini, cut in half lengthwise, sliced
1 medium yellow summer squash, cut in half lengthwise, sliced
1/4 teaspoon dried Italian seasoning
1/4 teaspoon salt
1/8 teaspoon ground black pepper
2 tablespoons Parkay® Original Spread-tub

Spray large skillet with cooking spray; heat over medium-high heat. Add zucchini, yellow squash, Italian seasoning, salt and pepper; cook 5 minutes or until browned lightly, stirring occasionally.
Remove from heat; stir in Parkay until melted.
If you don't have one of each on hand, using two zucchini or two yellow squash in this recipe will work too.
